When I joined Weight Watchers, I vowed to never give up the good stuff. You know, potatoes. And dessert. This delicious (and light!) Weight Watchers Tater Tot Casserole ensures that you get to eat the good stuff while staying on track with your Weight Watchers points.
But here is the honest to goodness truth about how we handle the cooking situation in my marriage. I DON'T Cook. It's not that I can't cook, but if this is a domain my husband wants to take over and be responsible for- WHY WOULD I MESS WITH THAT?
I guess if I had this burning desire to create the perfect quiche I might want to share the cooking responsibilities with him, but I have no desire to create any kind of food that requires more than peeling off a plastic top and popping it in the microwave for 50 seconds.
I never got a thrill out of kneading dough with my hands or flipping the perfectly shaped pancake. My husband, on the other hand, takes such pride in the meals he cooks, the recipes he concocts- that far be it from me to take that away from him- and to be honest- it is ONE LESS THING ON MY PLATE.
Also I should add that recently my husband asked me to watch the beans he was cooking and unfortunately I didn't notice they were burning until the smoke alarm went off- so yeah, there's that.
So this week my husband will be whipping up this Weight Watchers Tater Tot Casserole (Only 3 SmartPoints! Freestyle) ( and I will be meticulously cleaning all his mess as he says- “WHEN I'M Creative I can't be bothered to worry about errant veggie shavings and such”) keep reading for the recipe!
Weight Watchers Tater Tot Casserole
To be completely honest, this doesn't taste much “lighter” than the real deal (which could easily be 15+ points per serving). Your whole family will love it!
Ingredients
2 cups meatless crumbles
2 cups cauliflower rice medley
20 frozen tater tots
1 small can 98% fat free cream of mushroom soup
1/3 cup fat free shredded cheddar cheese
9×9 casserole dish
SERVES 9.
3 SmartPoints per serving.
Directions
Preheat oven to 425*F. Spray 9×9 casserole dish with Pam or any other 0 point pan spray.
Layer ingredients: meatless crumbles, cauliflower rice, mushroom soup, tater tots, then shredded cheese.
Bake for 40 minutes on 425*F. Optional: top with green onions and nonfat Greek yogurt (in place of sour cream). Makes 9 servings.

20 tater tots for 9 servings? Each serving would get 2 plus another little crumb! This must be an error.
I just did 18 tator tots, three per serving. Still same points and for my ocd made more sense
If its 9 servings, wouldn’t that be 2 per serving using 18 tots?? 3 per serving would be 27 tots.
Where can you find the riced cauliflower?
Any freezer section– it is with the frozen vegetables I like Green Giant– at Trader Joe’s, Kroger, Shoprite
Made this tonight! I recommend salt, pepper and either Italian Seasoning or something similar for flavor. I also recommend doubling the recipe! It will be great as leftovers for lunch.

What is meatless crumble, where do I find it.
Meatless crumbles is found with boca burgers and vegetarian sausages, etc…. but I’m thinking of using ground turkey. It is zero points and I think might be better.
Great idea for the turkey! Have a tough time with yard bird and turkey, but meatless crumbles is too far for me!!
I agree with Cheryl you would only get two tater tots each per serving to make it come out to the 3 points, but a pretty hearty meal. Looks good.

they are a frozen vegetarian product that takes like meat. You can also use ground turkey if you want and does not change point value
I don’t do condensed soups. What could I sub for it? Hubby would love.
If you don’t use condensed soups, do you know how to make your own? 1/4 cup butter, 1/4 cup AP flour, 1 1/2 cups chicken broth, 1/2 cup milk. In saucepan over medium heat – Melt butter, whisk in flour, slowly whisk in broth and then milk and stir until thickened. Cool before using. Homemade, better than the can.

This can also be made with ground turkey which is 0 freestyle points, I cant buy meatless products because my husband has a severe soy protein allergy. This is a great recipe!
9 servings in a 9×9 pan? Those would be awfully small servings- Iwould say it’s maybe 6 servings and figure the points that way.
Yeah exactly! Because when I did the calculations in the WW recipe builder (I guess depending on the ingredients used) it came out to be serves 9 for 2 Smartpoints
Absolutely delicious but 9 servings is crazy in a small casserole. I second it that if you make it, allow for about 4-6 servings, depending on who’s eating it, and figure the points w that. I added canned French cut green beans to bulk it up w 0 points. It is just mouth-watering though. I highly recommend it.
Do you use the condensed mushroom soup as it? no adding any liquid to it?
Please clarify about the soup and the yogurt / sour cream comment at the end. It doesn’t seem like enough liquid if you just use the condensed soup without adding water to it. And there is no sour cream in the recipe?
The soup does not need to have water added, it is enough without it.
I think the yogurt comment is suggesting that you could use the yogurt as a topping, rather than sour cream…neither are necessary if you don’t want to use them.
Awaiting answer for a substitution for soup.
I provided a recipe for a homemade cream of chicken soup above. You could also search for homemade cream of celery (add celery to the recipe above), or mushroom. I prefer cream of chicken if I am making it.
