Ingredients

  • 2 cups Kodiak Cakes Power Cakes Protein packed whole grain buttermilk flapjack and waffle mix  19 Points
  • 1 1⁄2 tsp baking soda 0 Points
  • 1 1⁄2 tsp baking powder 0 Points
  • 1 1⁄2 tsp table salt  0 Points
  • 1⁄2 cup unsweetened applesauce 0 Points
  • 2 medium banana 0 Points
  • 9 oz Stevia In the Raw Sweetener Zero Calorie, Granulated 8 Points
  • 2 cups uncooked zucchini  0 Points
  • 2 tsp vanilla extract 1 Points
  • 1⁄2 cup unsweetened cocoa powder 3 Points
  • 8 Tbsp PB2 Powdered peanut butter  5 Points
  • 5 sprays cooking spray   0 Points
  • 6 Tbsp water

Instructions

  1. Preheat oven to 350 degrees. spray 16 muffin tins with non stick cooking spray and set aside.
  2. In a medium size bowl mix the kodiak mix, baking soda, baking powder and salt together;set aside.
  3. In a large bowl mix together the applesauce, mashed bananas and sugar substitute. add the zucchini, vanilla extract & cocoa powder. mix together until well blended.
  4. Add the kodiak mixture and mix together. (your batter will be thick)
  5. Spoon the entire mixture evenly into 12 prepared cupcake tins.
  6. In another small bowl mix the peanut butter powder with the water, Adding a tbsp of water at a time until you get a nice creamy consistency.
  7. Spoon peanut butter mixture into the middle of each muffin.
  8. Bake at 350 degrees for about 20 to 25 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
