Ingredients

  • 8 egg(0 Points
  • 1 cup(1% low fat cottage cheese 3 Points
  • 8 oz Cheese mozzarella, part-skim, shredded 19 Points
  • 2 tsp dried oregano 0 Points
  • 1 tsp baking soda 0 Points
  • 1 1 ⁄2 cup sfresh cherry tomato(e0 Points
  • 1 Tbsp canned tomato paste 1 Points
  • 1 Tbsp low fat cream cheese 1 point
  • Salt and pepper to taste
  • 5 sprays cooking spray 0 points

Instructions

  1. Heat the oven to 385 degrees.
  2. Whisk eggs, cottage cheese, grated cheese, baking powder, oregano, salt and pepper in a bowl.
  3. mix the batter along with the tomato paste and cream cheese.
  4. Spread the batter into 12 muffin molds on a muffin plate.
  5. Top with halved cherry tomatoes and bake in the middle of the oven for 20 minutes!
