Weight Watchers Carrot Cake Recipe

  • 1 ⁄4cup s unsweetened applesauce 0 points
  • 3 ⁄4cup s water 0 points
  • 2 egg s 0 points
  • 5 sprays Non-Stick Cooking Spray 0 points


  1. Preheat the oven to 350 degrees as directed on cake mix box (may vary depending on darkness of pan used)
  2. In a large mixing bowl, combine the dry cake mix, eggs, applesauce, and water.

  3. Mix until well combined.
  4. Pour the batter into the already sprayed (with non-stick spray), 13x 8 inch cake pan

  5. Bake for about 30 minutes at 375 degrees or until a toothpick inserted in the center comes out clean. The carrot cake will be light and fluffy.

Recipe Notes

I do not frost my cake, but you can add a bit of whipped topping for 1 point if desired. I individually wrap each slice in wax paper so that I don't over indulge!
