Weight Watchers Cheesy Zucchini fritters

Servings 6


  • Zucchini
  • 1 whole large egg
  • 1 Tbsp Onion Powder
  • 1 Tbsp Garlic Powder
  • ½ tsp salt and pepper
  • 1 ounce Fat Free or low fat Cream Cheese
  • 2 Tbsp Parmesan


  1. Spiralize 2 medium sized Zucchini, enough for one cup.  You can also buy the pre spiralized version at the store.
  2. Put Zucchini in a cheese cloth or a paper towel if you don’t have one and squeeze all the water out.  Do this a couple of times until the zucchini stops draining water.
  3. In a food processor, Combine the following ingredients and blend until fairly smooth but very thick.
  4. Once blender drop a dollup, I like to use an ice cream scoop, onto a hot pan with some olive oil.
  5. Sear until golden brown on both sides flipping once. Serve!

Serving size is 3 fritters and this recipe will make 6 Weight Watchers Cheesy Zucchini fritters.
