That's My Jam Shortbread Cookies

Use your favorite jam on this crispy buttery cookie The best part these are just 2 PP each on Weight Watchers and this Small Batch Recipe Makes 4 That's My Jam Shortbread Cookies

Ingredients

  • ½ cup or 65 grams of SF Yellow Cake Mix
  • 5 tsp or 22 grams of Lite Butter Spread I use I Can’t believe it’s not butter 30%
  • Preserves of your choosing I used Smucker's SF Raspberry & a Peach Fruit spread

Instructions

  1. Combine butter and cake mix with a large spoon until dough ball forms, wrap in saran wrap and place in freezer for 7-10 minutes.
  2. Preheat oven at 350 degree temperature grease 4 cavities in a muffin pan or 12 cavity brownie/cake pan

  3. Divide equally into 4 portions and gently press to the edge of cavity, if dough starts to get sticky just wet your finger tips a bit. Add your jam, 1 1/2 tsp to each portion.
  4. Bake 15 minutes, let cool in pan 10 minutes and remove gently.

  5. You can also just drop each portion on a baking sheet, create a divot (like Thumbprint cookies) add your jam and bake.

Recipe Notes

The orange is a Fruit Peach spread from Trader Joe's and those are 3 pts. Next time I'm doing all with SF Raspberry , the crust over powers the peach flavor
