This Zucchini Risotto recipe is basically plain risotto and fried zucchini!
If you have any fresh zucchini and arborio rice this is the recipe for you! We made it vegan too!
In heavy bottom pan add equal part olive oil and vegan butter two tablespoons of each sautéed onion and garlic till soft about five minutes
add 2 cups arborio rice do not rinse and sauté three minutes, add glass of white wine of your choice then add two cups warm vegetable broth and keep stirring.
For reference How To Cook Arborio Rice. Similar to traditional methods, the perfect water to rice ratio is 2:1, which means 2 cups of water per each cup of rice. In a saucepan over the stove, bring water to a boil and stir in rice. Cover, reduce heat and simmer for 20 minutes or until all water is absorbed.
Do not leave unattended and don’t let the rice stick to the bottom of the pan you have to mix it constantly it’s a labor of love but it’s worth it.
then I added fried zucchini couple tablespoons of vegan butter and shredded vegan cheese.
