Air Fried Squash Croquettes

Air Fried Squash Croquettes
1 serving(s) of three croquettes is two weight watchers points

the entire recipe makes four servings

Ingredients
Uncooked summer squash, grated
2 cup(s) (sliced)
Egg, whisked 1 item(s) (large)
All-purpose flour 1/2 cup(s)
Onion, chopped fine
1 small

Instructions

1 Squeeze as much liquid out of the
squash by wrapping in a tea towel and
wring out.
2 Mix all ingredients well (including
salt and pepper to taste) and let sit
for about 5 minutes.
3 Preheat air fryer to 375°F. Line the
baking basket with parchment paper and lightly coat with cooking spray.
4 Scoop about 1/3 cup into the lined
basket. Gently flatten to about 1/2 inch thick.
5 Lightly coat the tops with cooking spray and cook for 10 minutes. (Check on them during cooking to make sure they aren’t getting too brown)
6 Carefully flip croquettes over and
cook for an additional 5 minutes. Cool for a few minutes before serving.

Notes
Zucchini can also be used in this recipe.
