Apple Cinnamon Pecan Muffins - Two points each on all Weight Watchers Plans! 

Apple Cinnamon Pecan Muffins Two points each on Weight Watchers 

2  points for 1 Makes 14

Directions:

Preheat oven 375 degrees, grease muffin pan. I used my brownie pan.

1 cup of Almond Milk
1 1/2 cups of  Cinnamon Pecan Wheat Cereal, Like Kellogg’s 
1/4 cup of  Unsweetened Applesauce 
1 1/4 cup of Self Rising Flour 
1/2 cup of Golden Monkfruit 
1 Tbsp of Brown Sugar (nothing beats the real thing for flavor/sweetness) 
2 cups of diced Apples I used Gala, can use any sweet apple. I leave the skin on. .
1 Egg
2 tsp of Cinnamon
1/2 tsp of Nutmeg

Soak your cereal with the Almond Milk in a large bowl
In a separate bowl add diced apples and toss with sugar/sweetener/cinnamon & nutmeg. Let both of those sit 15-20 minutes. Reserve 1/2 cup of tossed apples.

Once your cereal is soft add your egg, applesauce, mix, then add your flour. Fold in apples add that sweet juice from the bowl too.

About 1/4 cup of batter for each muffin well. Top with reserved apples.

Bake 25-30 minutes. Let cool in pan 10-15 minutes.

Notes: 3.15 grams of Protein with 1 gram of Fiber each (12), great for grab and go pair it with a Protein Shake. You can also have 1 for dessert. I like that it’s a small batch and still low points. Store in the fridge
