These Apple Spice Cake Muffins are just two weight watchers points each or 3 points for 2 muffins

Apple Spice Cake Muffins

Recipe Makes 12 full size muffins,
5.3 grams of Protein in each muffin

Ingredients

  • 2 cups Kodiak Power Cakes Mix (Buttermilk)
  • 1⁄2 tsp baking powder
  • 2 apples (grated)
  • 1⁄2 cup Fairlife Lowfat Milk
  • 1 large egg
  • 1/4 cup sugar free maple syrup
  • 1⁄4 cup unsweetened apple sauce
  • 1⁄2 tsp cinnamon
  • 1⁄2 tsp apple pie spice
  • 1 tsp vanilla extract
  • 2 tsp cinnamon-sugar for topping

Instructions

  1. Preheat oven and grease muffin pan: 400 degrees, rack in the center of
    oven
  2. Grease 12 standard-size muffin cups (silicone baking cups work best, do not use paper liners)
  3. Grate 2 apples over a large bowl. Mix in the rest of the ingredients. Take care not to over mix.
  4. Fill muffin cups using large ice cream scoop or spoon.
  5. Sprinkle it with cinnamon sugar.
    Bake at 400 degrees in the middle of the oven for 10 minutes. Lower the oven temperature to 350 degrees, and bake for an additional 6-8 muffins, will be a light tan. Inserted toothpick should come out clean.
  6. Cool muffins on wire rack.

    I’m confused by the instructions. Do I grease (spray with cooking spray, I assume, since this is WW) the muffin tins and then line with silicone baking cups? Put the cups in first and spray them? Don’t use spray if using cups?

    These muffins are very delicious but on the Weight Watchers app, 1 muffin is 2 points & 2 muffins is 4 points, not 3.
