Baked potato Chips

If y’all  aren’t making your own chips you are missing out! A bowl of 18 chips was 2 points. I cut one potato that equaled 1.5 cups and got 4 servings out of it.

Baked potato Chips

1 medium potato cut at a 1/16 th inch on a mandolin. Spray with olive oil, salt to taste. Cook in a single layer at 400 degrees. 10 minutes then flip them over and watch closely they finish cooking really fast at this point. Only points is for the potato you use. If you coat with olive oil ,instead of the spray kind,then count the points for oil.

These are yummy. 1 large potato made 4 of these bowls full. The bowl has 18 chips in it. You can store these up to a week in an air tight container. Just make sure they are completely cooled. If not they will get soggy from moisture.
