these baked veggie fritters (whatever you want to call them). This is a great way to use up leftover mashed potatoes.

 

Baked Veggie Fritters

these are zero WeightWatchers points each
(You may need two prepared pans with parchment if your patties are made large, you don’t want to overcrowd them).

These are a nice alternative to black bean or lentil burgers.

We call this meal our Friday Fritter Night.

ingredients
4 cups leftover mashed potatoes
3½ cups frozen broccoli florets, slightly thawed and diced, 12 ounces)or fresh broccoli
2 ½ cups frozen corn kernels 12 ounces) rinsed and drained canned corn could work also, I’ve never used canned corn.
½ cup nutritional yeast (nooch)
½ cup fresh green onion/scallion sliced
1 teaspoon minced garlic
½ teaspoon black pepper
½ teaspoon onion powder
1 teaspoon turmeric

instructions

Simple to make, assemble the ingredients in a bowl, mix, form, and bake on parchment paper (excuse my old pan and wrinkly parchment, I reuse it).

Bake at 425 for 45 minutes. Can be air fried also, at 400 for 20 minutes.

Serve with your favorite home made or store bought salt free /sugar free condiments.

I make a ketchup from salt free tomato paste, vinegar and smoked paprika.

 

Home made mustard : Mustard powder, water, distilled white vinegar, and turmeric, mixed into a slurry consistency that you like. Vegan ranch dressing: Vegenaise, ACV, garlic fresh or powder, dried parsley, paprika, and black pepper. The fritters are good on their own, but the condiments give it some brightness and kick. I serve them wrapped in lettuce leaves with my pickles, and Cole slaw.
