Banana Baked Oats

Banana Baked Oats

This is a great breakfast and or snack’ Each serving is a total of four weight watchers points

Ingredients
1/2 overly ripe banana
1/2 c. Oats
1 egg
Pinch of salt
Sprinkle of Lily’s Sugar-Free Chocolate Chips

Instructions 

Place all ingredients EXCEPT chocolate chips in a blender and mix on high until smooth. Pour into a baking ramekin dish sprayed with a small amount of olive oil or avocado oil non-stick spray and sprinkle 7-8 chocolate chips on top. Bake at 350 for about 12 minutes. Test with toothpick or fork for doneness.

Notes:
*I quadrupled the recipe and baked in four small ceramic bowls.
*One serving of chocolate chips is 30 for 3 points; I divided 32 chips between the four bowls (8 chips) for 1 point per serving.

This was not as sweet as I would like, so I will add a little sugar-free syrup or monk fruit sweetener next time, but the texture and taste are near enough to a banana muffin and filling enough for breakfast. I included one serving (1 cup) strawberries and blueberries.
