Bell pepper rings stuffed with corn

Thank you Cindy for sharing this recipe for Bell pepper rings stuffed with corn. Makes six servings -each is zero points and if you choose to eat the entire recipe it is just 1 point! 

Bell pepper rings stuffed with corn 

Here is everything you need

Bell pepper rings stuffed with corn

Ingredients 

One 16oz frozen corn thawed (0 points)
2 bell peppers (0 points)
1 Laughing Cow cheese wedge 1 point ,
one Tbps Chobani nonfat Greek yogurt 0 points.

Directions
Preheat oven 400 .
Cut peppers into one inch rings.
I dice the ends of peppers to make a half cup. In a hot skillet sprayed with Pam add corn and peppers. Cook on high temp till you have slight roasted color on the corn about 5-7 minutes. Put corn and peppers in a bowl add cheese wedge and yogurt mix add salt and pepper to taste mix well. Parchment paper sprayed on cookie sheet place rings fill with corn mixture. Bake approx 30 minutes.

    Please note that the diabetic points on WW are different. The cheese, corn, and yogurt all have points. Each serving would have almost 2 points.
