Chickpea Stir-Fy This simple side contains just a few ingredients, takes only 20 minutes to make, and goes well with a variety of mains.

Chickpea Stir-Fy

Even though the recipe doesn’t incorporate soy sauce, feel free to add it. We add sweet red bell pepper to keep the flavor mild and family-friendly but you can use a green pepper if you prefer.

This stir-fry will keep you coming back for more. It is a go-to dinner option for vegans and non-vegans alike.

ingredients

1 can chickpeas, drained
Assorted veggies (red bell peppers, carrots, etc.)
Cooking spray
Garlic, salt, and pepper to taste

instructions
Heat pan with cooking spray. sauté garlic, add veggies, and chickpeas. Stir-fry until tender.
Season and serve.
