Easy Cheesy Enchiladas for One

This is so satisfying I can’t believe it’s low in points!

These are scrumptious -recipe is two points for the two enchiladas

Ingredients
Two Mission Yellow corn extra thin tortillas tortillas
1 cup fat free refried beans
1/2 cup Old El Paso Enchilada Sauce Mild
1/2 cup Great Value Fat Free Shredded Mild Cheddar Cheese
lettuce
tomato
dollop of fat free yogurt

Instructions
I microwaved 2 of the 1 point corn tortillas for a few seconds and rolled up some fat free refried beans for zero points in each one. Spray your pan and the enchiladas with cooking spray and bake at 400 for a few minutes to crisp up the shells. Take them out and pour on 1/4 c of the enchilada sauce (1 pt) and cheese of your choice. (I used 1/4 c of fat cheddar, ).

You can pop in the microwave or bake until cheese melts, then top with lettuce, tomato, ff Greek yogurt, whatever you want! Thank me later!
