Frittata topped with bruschetta

Frittata topped with bruschetta

Made a frittata with zucchini, summer squash. Used low-fat cottage cheese in the mix. Going to serve topped with roasted tomatoes for dinner -This entire recipe is one weight watchers point! 

My son said hates cottage cheese and loved this. The tomatoes make the dish!

Here is everything you need

Ingredients

6 eggs
3/4 cup fat free cottage cheese
1/2 large zucchini
1/2 large summer squash 
cooking spray 
two tomatoes 
trader joe’s bruschetta -3 tablespoons (1 point)

Instructions

Six eggs, 3/4 cup of fat free cottage cheese all mixed with garlic, salt and pepper. I layered 1/2 of a large zucchini and a summer squash sliced thin. Roasted those for about 20 min at 350 – cooking spray , salt and pepper as I mixed the eggs. Poured in and baked about 30 min . While it was cooking, chopped up tomato and roasted them in the pan- I added 3 tablespoons of Trader Joe’s Bruschetta to them. Served the frittata with a spoonful of tomato mixture over top.
