Lentil Sloppy Joe’s

Once you eat lentil sloppy joe’s you will never want it any other way!

You can use your favorite sloppy joe recipe and just substitute a pound of lentils for the pound of beef.

Thank you Isabella for sharing your recipe and pics with us!  This recipe is her mom’s Sloppy Joe recipe that she has made me since sghe was a kid. She just substituted the already cooked steam lentil from Trader Joe’s instead of beef.

Ingredients

1 lb. steamed lentils 

1/2cup chopped green pepper

1 medium onion (1/2 cup)

1 tablespoon brown sugar 

1 teaspoon dry mustard 

1/4 teaspoon salt 

1/8 teaspoon pepper 

8 oz. can tomato sauce 

1/2 cup Ketchup 

1 tablespoon Worcestershire Sauce 

1 tablespoon vinegar

6 sandwich buns 

Directions 

1. First you sauté the peppers and onion until soft.

2.While you do that mix all the other ingredients besides lentils in a bowl for the sauce.

3. Mix in the lentils with the cooked peppers and onions in the pan, then add the contents of the bowl. Mix all together.

4. Cover and simmer for 15-20 minutes until thoroughly heated stirring occasionally. So yummy!
