Mexican cauliflower bean bake 

Mexican cauliflower bean bake

Zero point dinner tonight! ❤️ I feel like I won the jackpot with this meal. I used to make something like this in a crockpot with quinoa but wanted to try it with cauliflower rice.

So good and easy for meal prep.

I hate cauliflower rice with a passion and this was a winner!

 

Ingredients 

Cauliflower rice (frozen)
Corn (frozen)
Onions (frozen and chopped)
Salsa
Black beans (canned)
Green Chile (canned)
S+P to taste
Spices: Cumin, chili powder, garlic powder, red pepper flakes, paprika, cayenne pepper

Instructions: Dump in a pan in order below and bake at 350 degrees for 45 minutes, then drain as best as you can, then bake for an additional 30 minutes at 300 degrees.

Use less spices to make it less spicy or eliminate red pepper flakes, cayenne pepper and chili powder 🌶️
