1 weight watchers point full size miraculous blueberry muffins!
I’ve been playing with/editing ww recipes and I have figured it out. I use Kodiak flapjack and waffle mix (fewer points than their muffin mixes).
I added baking powder for “poof”. Honestly I did not measure the blueberries..used what I had, some fresh some frozen (didn’t thaw them). I also added some lemon extract.
Serves 6
Ingredients
Egg(s)
2 item(s) (large)
Banana(s) 2 large
Baking powder
3/4 tsp
Table salt
1/8 tsp
Kodiak Cakes Buttermilk flapjack & waffle mix 1/2 cup(s)
McCormick Lemon Extract
1 1/2 tsp
Driscoll’s Fresh Blueberries
1 cup(s)
To make 6 Miraculous Muffins.
Pre-heat oven to 350 degrees. Spray muffin tin with cooking spray.
Mash up 2 large, ripe banana with a fork. Mix in two beaten eggs. Stir in a 1/2 cup of any of the Kodiak Power Buttermilk Flapjack and Waffle mix (my Costco in VT has big boxes!)
Spoon mixture into six of the prepared muffin cups. Bake for 22-25 minutes, until the muffins look dry on top and are turning slightly golden brown. (Note that Miracle Muffins will have a denser texture than some standard muffin recipes.) Remove tin from oven and allow muffins to cool before removing from tin

The recipe looks good however in the directions you only put the bananas, eggs and Kodiak mix. There’s nowhere that says add the blueberries, salt etc…
That was my comment, too! Also, it’s kinda hard to read the ingredients the way they’re printed. Please change it to the standard of amount first, followed by the item (on the same line). Overall, it sounds great!
