Perfect as a light lunch, a side dish with grilled fish, or just something to keep in the fridge when you’re looking for a healthy snack.

If you’re growing tomatoes and cucumbers in your garden, this is a delicious way to enjoy the harvest. 🌿🍅🥒

Makes 8 servings – only 1 Weight Watchers point per serving!

Ingredients

* 1 cup tomatoes (Everglades tomatoes are fantastic!)
* 2 cups chopped cucumber
* 1 can chickpeas, drained and rinsed
* 1 cup chopped yellow bell pepper
* ¼–½ cup diced red onion
* 2–3 cloves garlic, minced
* 2–3 Tbsp fresh dill, chopped
* ⅝ cup chopped cilantro (or substitute parsley for a more Mediterranean flavor)
* 3 oz fat-free feta cheese
* 1 Tbsp olive oil
* 1 cup water
* 1 cup apple cider vinegar
* Juice of 1 lemon
* Red pepper flakes, salt, and black pepper to taste

Directions

Mix the water, apple cider vinegar, lemon juice, olive oil, garlic, and seasonings together. Toss with all the vegetables, chickpeas, herbs, and feta. Refrigerate for several hours (or overnight if you can wait!).

    This salad looks so fresh and refreshing, especially with the simple ingredients and the fact that it gets even better after marinating. On the other hand, when I’m taking a break from healthy meal prep, I like playing Rocket Goal for a few quick matches—it’s a fun way to relax for a while.
