oatmeal banana blueberry individual cake


2 weight watchers points.

In a bowl put these ingredients
1 banana smash a bit
1oz dry oatmeal
1 egg
Pinch baking soda
1/4 t baking powder
A bit of salt

You can adjust the following spices to your liking.
1 t cinnamon
1/4 t cardamon
Touch of extract. I use either banana or almond.
1/8t ginger
1t poppy seeds

Instructions

Put all of this in a bowl and mix with a hand mixer until the banana is well blended.

At this point you can fold in blueberries or cranberries. I fill 4 4” silicone molds. I pour the batter into the molds and then push 5 blueberries down into each one. I also crumble some walnuts on top. I do it this way so the blueberries are evenly distributed.

Put into the refrigerator for 30 minutes. Set the oven at 350 and cook for about 40 minutes.

You could easily up the protein with nuts. I have used mango too.
