This recipe makes four servings or you can eat the entire Overstuffed Tex Mex Quesadilla for four points on Weight Watchers Blue!

Overstuffed tex-mex quesadilla
Ingredients
- 2 @olemex_labanderita wraps 2 points on WW blue
- egg whites,
- fat free cheese 1 point on WW blue
- black beans
- spinach
- jalapeños
- red onion
Instructions
- In a pan, sautée spinach and red onion until the spinach is wilted and there is no liquid.
- Add 1/2 cup egg whites. Season with s & p to taste. Stir continuously until the egg whites are cooked and there is no liquid.
- Add black beans to pan and mix well. And the jalapeños are added with the black beans. 4. Add mixture to 1 point tortilla of choice & add 3/4 cup fat free cheddar. Fold tortilla over the mixture to form a quesadilla.
- In a separate pan, brown on both sides until cheese is melted!

Believe me it is easy to get caught up in the hype and I think many of us parents do it from a place of true love for our kids and wanting to give our little humans a day that will prove to them just how special they are and how dear they are to our hearts ( as though being there to clean up all their vomit, wipe their little behinds and feed them night and day doesn’t already illustrate that point- but I digress!)

Have the party at home. You don’t have to take the kids to some expensive venue. Have the party at home, have some traditional party games and everybody has fun. Some games you can try are depending on the child’s age are Freeze Dance, Musical Chairs, Charades, Three-Legged Race, Duck, Duck, Goose!
Forget the Themed partyware-use old fashioned white paper plates and cups! When you serve the cake, pizza, or ice cream no kid really looks at the plate and says I want Spiderman or Batman they eat it make their mess and everything gets thrown out the same way minus the expensive of 50 cents a plate at a party store
Remember the Dollar Store. You can get tablecloths, balloons and favors much cheaper here and let’s face it kids will break their favor or balloon within 30 minutes anyway so no need to spend a lot on going home goodie bags.
Send out invitations via email that way you don’t have to spend on invitations, stamps and you can get an immediate response most of the time.
