This Roasted Tomato and fresh basil Spaghetti squash bake is always DELICIOUS (and quite the workout slicing the spaghetti squash)!p

This recipe serves 4 and each serving is three weight watchers points
She’s made variations of this for years and switch it up each time. she had a little fur baby follower in the kitchen so you know it is goooooood!
Roasted Tomato and fresh basil Spaghetti squash bake
Ingredients and Instructions
•Basically started by roasting spaghetti squash halves in Italian spices, onion powder, garlic & drizzled with olive oil and placed cut side down in a 9x 13 ~35-40min at 375.
•While that’s roasting, In a small baking dish (separate), I mixed 2 T Trader Joe’s spinach artichoke dip, 10 Boursin cheese balls/cubes, fresh spinach and basil, 1 container of grape tomatoes, 1/2 yellow onion (finely diced), fresh garlic, Italian spices of your choice….
I put this in oven until cheese was melty and the tomatoes “pop”.
Once squash is done, I scooped out the “noodles” and added them to the cheesy tomato mixture and tossed together!
I used 1.5 halves of a medium sized squash for the sauce I made which came out to a total of 3 points for each serving.
