Skinny lemon blueberry protein muffins

ingredients

1 cup plain Greek yogurt
1 cup Kodiak buttermilk pancake mix
1 egg
3 tbsp sweetener
Zest of one lemon
1 tbsp lemon juice
1/2-1 cup of fresh or frozen blueberries

instructions

Preheat oven to 350 and spray or line muffin tin.
In a bowl, whisk yogurt, egg, sweetener, lemon zest, and lemon juice.
Stir in the Kodiak mix just until combined — don’t overmix.
Fold in blueberries gently.
Evenly divide the batter into the muffin cups.
Bake 18–22 minutes, until lightly golden and a toothpick comes out clean.
Cool completely — they firm up nicely as they cool.

    These muffins sound delightful! I appreciate the balance of protein and flavor you’ve created. Have you considered adding some chia seeds for extra texture and nutrition?
