Small Batch Chocolate Chip Crunch Topped Pumpkin Bars

Preheat oven 350 degrees, grease 6” square or round baking dish or something comparable
Batter:
½ cup High Protein Pancake Mix, I use Kodiak Buttermilk
1 egg
1/8 cup white granulated sweetener, I use Monkfruit
¼ cup unsweetened applesauce
¼ cup pumpkin puree
1 tsp pumpkin pie spice
½ tsp vanilla extract.
Whisk eggs, sweetener, applesauce, pumpkin, add vanilla, stir. Whisk in pancake mix & powder. Transfer to prepared baking dish.
In a smallish bowl, add: 2 Tbsp each of Self Rising flour, brown sugar replacement ,old fashioned oats, 35 Sugar Free Semi Sweet Chocolate Chips, mix, with a fork smash in 1 tbsp of lite butter spread, I use I Can’t Believe It’s Not Butter Lite, until all dry ingredients are incorporated. Drop pieces over top of batter.
Bake 20-23 minutes, let cool a few minutes, transfer to cooing rack, slice while warm.
