Spaghetti Squash Marinara with cheese

Enjoy this low point treat for dinner with spaghetti squashprepared in the instant pot, just two weight watchers points for one half of the spaghetti squash with marinara and cheese! 
Spaghetti Squash Marinara with cheese

spaghetti squash 0 points 

1/2 cup  non fat cottage cheese 0 points and

 1/2 cup marinara sauce 2 points 

1 oz shredded fat free mozzarella 0 points  !

Instructions 

Cut the squash in half and remove the seeds. Add one cup of waterthe the instant pot and place a small trivetat the bottom of the pot to hold the squash(so it doesn’t sit in the water). | think my pot came with the trivet used.

Place both halves of the squash in the pot, close thelid and make sure the seal is not venting. Cool on the Pressure Cook setting for 7minutes (takes a bit to build the pressure,so total time is closer to 20 mins). Once-it’s done, vent the steam and release thelid. Obviously, it will be hot so be careful. From there I transferred to a plate to shred the squash and add the other toppings.

Added the cottage cheese, marinara sauce and shredded mozzarella cheese to one half of the spaghetti squash and mixed it all up while the squash was piping hot! it all melted and tasted like a lasagna!

Super easy AND you don’t have to be in the kitchen while it’s cooking!
