As parents we are all bombarded by the media’s frenzied broadcast blitz of daily food-related news reports and research studies urging us to feed our kids nutritious foods and lots of finger pointing about all the things we’re doing wrong! Well I’m going to help you change that one meal at a time with these Easy and The Best summer Salad Recipes

I think I’m in the majority of moms who try to balance my kids’ nutrition concerns, with my lack of time! I’m the first to admit that there have been weeks where I’ve fed my kids pizza at least two nights in a row, because it was convenient, and definitely easier than prepping a salad, steaming broccoli and grilling salmon. However, I’m constantly trying to find ways to provide my kids with nutritious alternatives to their fast-food favorites. But I’ll be honest- my daughter- even as a wee lil babe would eat ANYTHING I put near her lips- regardless of the color or texture. She was and is an adventurous foodie, unfortunately my son will have NONE of it. He likes what he likes, and if forced to eat something that his palette does not agree with- he’ll show me and gag to the point of vomiting it all over the place. And really at the end of that sequence- who wins?
So I’ve had to get creative and use bribery as my first line of defense. Sure he eats macaroni and cheese like it’s the last meal I’ll ever feed him, so I always use whole wheat pasta and try to blend veggies into the cheese sauce (sometimes he can sniff them out and sometimes I get away with it). I steam broccoli every night and three out of five times if I catch him in a food friendly mood I can get a few spears down his gullet. I also hide Vitamin D pills in his cereal milk and tell him he cannot have those Twizzlers he so yearns for unless he has a fruit first (and nine out of ten times he’ll eat the fruit first!)
So of course I am always on the hunt for new ways to get my kid to eat healthy
first up My new favorite summer salad is only 1 point for me! Makes 6 servings!

2 cans garbanzo beans,
1/2 c cucumber,
1 red bell pepper,
diced red onion,
4 oz reduced fat crumbled feta cheese,
3 tbsp lemon juice,
1 tbsp olive oil.
This makes more than 6 servings.

35 grams avocado 1pp
1 tbsp plain NF greek yogurt 0pp
1 tsp mustard 0pp
w/ a dash of garlic salt!
a super low point base that can be used in so many ways! just mash up the above ingredients!
She ate it on a @traderjoes ciabatta roll (6pp) with spinach & a side of 🥕 & @ww ranch veggie snaps (2pp) +1pp back for the spinach & 🥕!

Sooo good, tomatoes and cucumbers with vinegar, water, splenda, salt, pepper, dash of hot sauce and everything bagel spice.

Cabbage
Tomatoes
Red onion
Radishes
Mango
Cilantro
Salt
Real lime and lemon juice to your liking
It can be used as a Pico de Gallo on tacos or a shrimp salad
