Very Veggie Egg Tortilla bake

You’ve got to try this egg tortilla recipe!!
I get tired of basic “eggs”. This recipe popped up on my video reels and I had to try it. It is delicious and filling!! I tweaked it a bit to keep it lower in WW points. Definitely making this again!

Makes 4 servings! each serving is two weight watchers points each!

Ingredients

Carb Control tortilla: 1pt (Aldi brand)
2 Tbs reduced fat feta crumbles: 1pt
2 Tbs fat free mozzarella cheese: 0pts
1/3 cup fat free cottage cheese: 0pts
1/2 tsp of Italian seasoning
Cooking spray for greasing the baking dish
3 large eggs
Salt to taste
Black pepper to taste
Tomatoes diced
Green peppers diced
Spinach or arugula chopped
Red onions

Instructions

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While the oven is heating up, gather all the ingredients, and prepare the toppings.
Take a round baking dish or a pie dish that’s approximately the same size as the tortilla. Grease the bottom and sides of the dish lightly with cooking spray
Place the tortilla at the bottom of the baking dish to create the crust.
In a mixing bowl, whisk together the eggs and cottage cheese until well combined. Season the mixture with a pinch of salt and pepper to taste.
Pour the egg and cottage cheese mixture over the tortilla in the baking dish, ensuring it spreads evenly.
Now, add the toppings. Sprinkle diced tomatoes, diced green peppers, and chopped spinach or arugula evenly over the egg mixture.
