1-Point Chocolate Zucchini Mini Cakes

You can literally have your cake and eat it too! I love these individual Chocolate Zucchini Mini Cakes. Since the recipe makes a big batch I simply freeze and eat them one at a time!

The recipe makes 25 mini cakes. And it is a great way to add some fiber into a sweet treat!
They are moist and tasty and so easy to prepare!!

1-Point Chocolate Zucchini Mini Cakes
Ingredients
- 3 eggs
- 1/2 cup of applesauce
- Pillsbury sugar free chocolate fudge brownies mix (serves 12, we found the cheapest prices on this must-have mix from the Walmart link)
- 1 medium raw zucchini
Instructions
- Grate zucchini into mixing bowl
- Add duncan hines mix eggs and applesauce to the zucchini
- Made 25 servings—each cake liner was filled with about one and a half scoops of batter.
- Bake 350 for 18-21 minutes as stated on box.

- Grate zucchini into mixing bowl
