Banana Blueberry Breakfast Bread

๐ŸŒBanana Blueberry Breakfast Bread

Ingredients 

๐ŸŒ2 ripe bananas
๐ŸŒ1 egg
๐ŸŒ1/4 cup milk of choice
๐ŸŒ3 tbsp unsweetened apple sauce
๐ŸŒ1/2 tsp vanilla
๐ŸŒ1/4 cup swerve brown sugar
๐ŸŒ1/2 tsp cinnamon
๐ŸŒ1 cup Kodiak buttermilk flapjack mix – 8 points
๐ŸŒ1 cup blueberries

Instructions 

๐ŸŒPreheat to 375*
๐ŸŒSpray two mini loaf pans or small baking dishes (mine were approx 4.5in. in diameter)

๐ŸŒMash banana well with fork
๐ŸŒMix in egg, milk, apple sauce and vanilla
๐ŸŒMix in cinnamon and brown sugar
๐ŸŒAdd Kodiak mix and stir to combine
๐ŸŒFold in blueberries

๐ŸŒSpread evenly between the dishes and bake approx 30 minutes, until toothpick is clean.

I’ve never used a different brown sugar substitute so I don’t personally know how others would turn out.
