Banana blueberry Oatmeal Bread
these breads are for breakfast, snack, or dessert. The varieties are endless – add in any fresh or frozen unsweetened fruit you have on hand.

If you don’t have mini loaf pans, you can also use mini muffin pans.

Ingredients

Cooking spray
4 spray(s)
Quaker Lower Sugar Maple and Brown Sugar Instant Oatmeal
2 packet(s), or similar product
White self-rising flour
⅓ cup(s)
Egg
1 large egg(s)
Fat free skim milk
¼ cup(s)
Banana
1 medium, ripe, mashed with a fork
Unsweetened frozen blueberries
½ cup(s), or fresh blueberries

Instructions

Preheat oven to 350°F. Coat 4 mini loaf pans (about 3 1/2 x 2 inches per compartment) with cooking spray.
Place oatmeal in a bowl; sift flour over top. Whisk egg with milk in another bowl; stir into oat mixture. Add banana and blueberries; stir to combine. Divide among prepared pans; smooth in an even layer.
Bake until a tester inserted in center of a loaf comes out clean, 20-25 minutes.
Let cool slightly in pan; remove

Serving size: 1 loaf
