Blueberry Breakfast cake
This is a great snack cake and you could switch it up depending on the fruit you use! It makes 4 servings and each serving is three points on Weight Watchers!

Ingredients
Egg(s) 2
Kodiak Cakes Power Cakes Whole grain
buttermilk protein packed flapjack and waffle mix 1 cup(s) dry mix
Oikos Triple Zero Vanilla Nonfat Greek
Yogurt (32 oz container) 1 cup(s)
Fresh blueberries
1 cup(s)
Vanilla extract
1 tsp
Directions
Mix all the ingredients listed, stir in blueberries last, and bake for 45 minutes in an 8×8 pan at 350. No added sugar but you could add some light syrup if you wanted. I topped with some butter spray. ๐

This is a dense cake. I made it for breakfast, leaving out the protein powder and using FF Greek Yoghurt, with SF syrup on the side for 2 WW points. It’s a nice sized piece and tasty. Thanks for all your recipes — I’ve enjoyed reading about them and trying some out.
