Oh Em Gee I absolutely love this recipe!! These blueberry fritters are a delicious breakfast, snack or treat.

INGREDIENTS:
Fritters:
- 1 & 1/2 cups organic all purpose flour
- 1/4 cup monk fruit
- 2 tsp baking powder 1/2 tsp salt
- 1 egg
- 1 tsp vanilla
- 3 tbsp unsalted butter
- 11 oz Greek yogurt
- 1 cup blueberries
Glaze:
- 1/2 cup powdered monk fruit
- Small handful of blueberries, smashed
- Dash of vanilla extract
- Almond milk (about 1/4 cup but just as it gradually until you get a glaze consistency)
INSTRUCTIONS:
1. Preheat oven to 350°F. Grease a mini muffin tin.
2. Whisk the dry ingredients together in a large bowl then add in the wet. Mix until just combined.
3. Fold in the blueberries.
4. Scoop batter evenly into the muffin tin (it’s ok if they are messy looking cause they will look more like fritters that way!).
5. Bake for 15 minutes. In the meantime, make the glaze by whisking the glaze ingredients.
6. Dip each fritter in the glaze and then line them up on a lined baking sheet.
7. Set oven to broil. Broil for 5 minutes, turning half way. 8. Remove from oven and drizzle any remaining glaze you have on top of the fritters. This technique will give you that perfect fritter glaze texture without frying!!
