Bowl and spoon VEGAN chocolate chip ice cream sandwiches

3/4 stick vegan butter, softened
3/4 cup brown sugar, organic + 1 tbsp black strap molasses, combined
3/4 cup organic sugar
1 tsp vanilla
3 tbsp Just Egg
1.5 cup all purpose flour
1 tsp baking soda
Large pinch salt (I used a turn of my pink salt grinder)
1-1.5 cups Enjoy Life dark chocolate chips

Instructions 

Preheat oven to 350

You could use a mixer for this but I just used a fork; the butter has to be soft. Cream butter and sugars. Add vanilla and Just Egg, mix until just blended. Mix flour, salt and baking soda separately, then stir into sugar mixture. When combined, stir in chocolate chips. Mixture should be smooth and almost caramel color. Spoon into large round mounds on a baking sheet, 1.5-2 inches apart. Freeze pan for about 5 minutes, while heating oven. Bake for 11 minutes. Lift off pan with a spatula immediately, carefully, and cool on racks or flat paper towels.

Please remember I wrote this recipe after I made these cookies! Lol. This is my disclaimer 🤪❤️ You can double it, but it should make 7-10 large cookies, depending on how big you make them.
