Cheesy Portobello Crust Pizzas

These mouth-watering cheesy portobello crust pizzas are satisfying, healthy and loaded with good-for-you fiber. Better yet, they’re a low-carb treat that can easily be used as appetizers, side dishes or the main event.

These meat-like portobello mushroom caps replace pizza dough in this recipe. We heat the sheet pan until and then add the assembled pizzas so that the mushrooms cook through.

Ingredients
- Cooking spray
- 2 large portobella mushrooms, stems removed
- 1 cup part-skim shredded mozzarella cheese
- Handful of thinly-sliced grape tomatoes
- 2 tablespoons of balsamic vinegar or balsamic reduction
Instructions
- Place a sheet pan in the oven and preheat to 450°F
- Meanwhile, on a cutting board or other work surface, place the mushroom caps gill side down
- Coat the tops of the mushrooms with cooking spray and flip over, gill side up. top each with cheese
- Divide the tomato slices evenly among mushrooms
- Carefully remove the hot pan from the oven
- Arrange the topped mushrooms on the pan
- Bake until the cheese is melted and the mushrooms are cooked through, 8 to 10 minutes
- Drizzle balsamic vinegar on each mushroom

Ingredients
- Cooking spray
- 4 spray s
- Portabella mushrooms
- 2 large stems
- Shredded part skim mozzarella cheese
- 1 cup s
- Grape tomatoes
- sliced
- 2 tablespoons balsamic vinegar
Instructions
- Place a sheet pan in the oven and preheat to 450°F.
- Meanwhile, on a cutting board or other work surface, place the mushroom caps gill side down. Coat the tops of the mushrooms with cooking spray and flip over, gill side up. top each with cheese. Divide the tomato slices evenly among mushrooms.
- Carefully remove the hot pan from the oven. Arrange the topped mushrooms on the pan. Bake until the cheese is melted and the mushrooms are cooked through, 8 to 10 minutes. drizzle balsamic vinegar on each mushroom.
- Serving size: 1 mushroom pizza
