Chickpea Avocado Salad

Tt all gets easily dumped into a bowl and sprinkled with lime juice.

Enjoy this meatless dish on its own or make it into a more substantial meal by serving it alongside roasted sweet potatoes or spooned over whole wheat couscous or brown rice.

Throw in a pinch of cayenne, crushed red pepper, or minced jalapeño to turn up the heat. The entire recipe is just two weight watchers points.


Ingredients

  • ¼ tsp lime zest
  • 2 tsp fresh lime juice
  • 1 pinch table salt
  • 1 cup canned chickpeas (garbanzo beans), rinsed and well drained
  • ½ cup quartered cucumbers
  • ¼ finely chopped avocado (or just small chunks)
  • 2 tbsp, chopped fresh cilantro

Instructions

In a medium bowl, combine the lime zest and and salt. Add the chickpeas, cucumbers avocado, cilantro, and toss.
Serving size: 1 salad

  • 1 cup s, rinsed and drained
  • Cucumber
  • ½ cup s, quartered
  • Avocado
  • ¼ item s, finely chopped
  • Cilantro
  • 2 Tbsp chopped
