This Mediterranean-inspired dish makes a lovely light lunch or dinner side salad. Bulk it up by adding crumbled feta cheese.
One tip to save washing a bowl: Whisk your vinaigrette ingredients together in the bowl you plan to serve the salad in, and then toss in the greens, beans, tomatoes, and onion.
Tarragon is aromatic with a robust flavor and tender leaves—it’s worth using fresh here because the flavor is simply better than dried.

Cherry tomatoes
10 medium, halved
Onion
½ cup(s), chopped, red, diced
Balsamic vinegar
2 Tbsp
Fresh tarragon
2 Tbsp, minced
Dijon mustard
1 Tbsp
Garlic
2 clove(s), minced
Olive oil
½ tsp
Table salt
¼ tsp
Black pepper

Instructions
1 In a large bowl, combine cucumbers, beans, tomatoes, and onion.
2 In a separate bowl, whisk together remaining ingredients for dressing. Pour over salad and toss well before serving. Yields about 2 1/2 cups per serving.
