I’m a veggie, so this chipotle style veggie salad is perfect for me.

Chipotle style veggie salad

since I eat a lot of beans and this is my favorite 0 point bean base.

Some would say it’s similar to cowboy caviar or a dense bean salad, but mine doesn’t have cheese or oil.

This is my go-to “Chipotle dupe” … where I can add a plant based chorizo, eggs, TVP, etc.

I can eat it in a bowl or wrapped in a low carb tortilla.

Ingredients

2 cans black beans (drained & rinsed)
2 cans pinto beans (drained & rinsed)
1 can corn (drained & rinsed)
1 large diced tomato
1 diced pepper (red, green, yellow, or orange)
1/2 diced red onion
2T chopped garlic
2T chopped cilantro
2 finely diced fresh jalapeño
Juice of 2 limes
Salt & pepper to taste

Instructions 

I store in mason jars in the fridge.
