Ingredients

  • 1 cup mashed/precooked butternut squash
  • 1/4 cup cassava flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 cup Truvia Sweet complete brown sugar calorie-free sweetener
  • 1/4 cup unsweetened appleasauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions

  • Preheat oven to 350F (180C)
  • Line square 1 glass baking pan with parchment, and spray it lightly with oil
  • Peel and cook (or bake) butternut squash till soft, and set aside to cool off completely (doing this ahead of time, or the day prior is a good idea)
  • Mush it till smooth
  • Mix all of the ingredients until completely combined—I just used a spoon
  • Pour the mixture into the baking pan and smooth the top with a spoon
  • Bake for about 30 minutes or until toothpick test comes out clean

Notes: Sweet potato can be used instead of butternut squash, but it will result in a bit more points.
