Ingredients
- 1 box sugar free yellow cake mix
- 1 cup canned pumpkin puree
- ½ cup unsweetened applesauce
- 3 large eggs
- ½ cup water
- 1½ tsp pumpkin pie spice
- 1 tsp cinnamon
Directions
- Preheat oven to 350°F.
- Line a muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together the cake mix, pumpkin pie spice, and cinnamon.
- Add pumpkin puree, applesauce, eggs, and water. Mix until smooth.
- Divide batter evenly into muffin cups – fill each about 2/3 to 3/4 full.
- Bake 18-22 minutes, or until a toothpick comes out clean.
- Cool on a wire rack.
Yield: About 12-18 standard muffins. Optional topping ideas:
* Sprinkle cinnamon sugar on top before baking for a sweet crust.
