Ingredients

  • 1 box sugar free yellow cake mix
  • 1 cup canned pumpkin puree
  • ½ cup unsweetened applesauce
  • 3 large eggs
  • ½ cup water
  • 1½ tsp pumpkin pie spice
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 350°F.
  2. Line a muffin tin with paper liners or lightly grease.
  3. In a large bowl, whisk together the cake mix, pumpkin pie spice, and cinnamon.
  4. Add pumpkin puree, applesauce, eggs, and water. Mix until smooth.
  5. Divide batter evenly into muffin cups – fill each about 2/3 to 3/4 full.
  6. Bake 18-22 minutes, or until a toothpick comes out clean.
  7. Cool on a wire rack.

Yield: About 12-18 standard muffins. Optional topping ideas:

* Sprinkle cinnamon sugar on top before baking for a sweet crust.
