Weight Watchers Confetti Salad Recipe

This colorful, crunchy confetti salad would be a great addition to any summer BBQ or picnic. Try it as a topping for fish tacos, too.

This salad is zero weight watchers Points per serving and the recipe Serves 10

Ingredients

  • 30 ounces of drained, rinsed canned black beans
  • 2 cups cooked, drained and cooled shelled edamame
  • 2 cups thawed, drained frozen corn
  • 1 average seeded and minced Serrano Chile pepper 
  • 1 medium chopped red bell pepper
  • 1 medium chopped orange bell pepper
  • 1 medium chopped yellow bell pepper
  • 1 medium chopped red onion
  • 1/2 cup minced cilantro
  • 3 tablespoons fresh lime juice
  • 3 tablespoons fresh lemon juice 
  • 3 tablespoons lime zest
  • 1 tablespoon kosher salt
  • 2 tablespoons sugar
  • 1 teaspoon cumin seeds
  • 2 tablespoons olive oil

Instructions

  • In a large bowl, combine black beans, edamame, corn, peppers, onion and cilantro.
  • In a small bowl, whisk together vinaigrette ingredients.
  • Drizzle vinaigrette over bean mixture and toss to coat.
  • Serve chilled or at room temperature.

Yields about 1 cup per serving.

This salad can be made a day ahead – just refresh with additional lime as needed before serving.

  • 10 oz thawed, drained (or fresh corn; about 1 3/4 cups)
  • Serrano chile pepper
  • 1 average seeded, minced
  • Red bell pepper
  • 1 medium chopped
  • Orange bell pepper
  • 1 medium chopped
  • Yellow bell pepper
  • 1 medium chopped
  • Red onion
  • 1 medium minced
  • Cilantro
  • ½ cup s, fresh, mincedVinaigrette
  • Fresh lime juice
  • 3 Tbsp
  • Lemon Juice
  • 3 tbsp
  • Lime zest
  • 1 Tbsp
  • Kosher salt
  • 1 Tbsp
  • Sugar
  • 2 tsp
  • Cumin seeds
  • 1 tsp
