Like yogurt, creamy, protein-rich cottage cheese takes well to both sweet and savory toppings.

Here, a simple combo of Eggs, cucumbers, fat free cottage cheese and tomatoes. Balsamic glaze makes for a colorful, filling meal.

Ingredients

Fat free cottage cheese
1 cup(s)
Cucumber
½ cup(s), sliced
Cherry tomatoes
½ cup(s), halved
Hard boiled egg
1 large egg(s), halved
Balsamic vinaigrette
2 tablespoons
Table salt
1 pinch(es), optional
Black pepper
1 pinch(es), optional

Instructions

Spoon the cottage cheese into a shallow bowl. Arrange the cucumber, tomatoes, and egg on top. Drizzle with the balsamic , and salt and pepper, if using.
Serving size: 1 bowl
