Similar to Cowboy it is Also known as Texas caviar, and it is a combo of beans and crunchy vegetables in a tart style dressing.

Texas Caviar

The best party this entire recipe is zero weight watchers points!

It most often includes black-eyed peas, but we make ours with black beans. Enjoy it as a dip with tortilla chips, a salsa over grilled fish (or spooned into tacos), or a side salad. It keeps well for a couple of days, so it’s a great make-ahead option.

Ingredients 

  • ½ cup canned beans
  • ½ cup Rotel Original diced tomatoes & green chilies
  • 1 tbsp fresh, chopped cilantro
  • 2 tbsp minced garlic (or fresh if you have)
  • ½ cup canned corn (drained)
  • 1 tbsp fresh lemon juice (or more to taste)
  • Salt and pepper to taste

Instructions 

In a large bowl, whisk together the lemon juice, salt, black pepper, and garlic. Add the beans, corn, tomatoes, onion, cilantro, jalapeños, toss well to combine.
