Egg Salad Bell Pepper Boats

This is a great dinner option. Or lunch or breakfast I guess! Egg salad bell pepper boats are easy, quick and fun to make. When the weather is hot, they’re also incredibly refreshing. Bonus: kids love boat-style eating too!

Ingredients
- 1 medium red, orange or yellow bell pepper
- 2 large hard boiled eggs
- 1 teaspoon dijon mustard (or more if you prefer)
- â…“ cup plain fat-free Greek yogurt
- 1 pinch black pepper (or more if you prefer)
- 1 pinch everything bagel spice
Instructions
- Slice bell pepper in half and remove stem, seeds and any ribs
- Set aside until ready to use
- Grate cooked eggs then mix together with the mustard and yogurt until mostly smooth, season with salt and pepper, and stir to combine.
- Scoop half of the egg mixture into each bell pepper half
- Season again with salt and pepper and everything bagel spice
If you want to try some variations or new spins on this, consider a dash of cayenne pepper (if you like it hot), fresh dill or a bit of garlic salt.

- 2 item s, large
- Dijon mustard
- 1 tsp or up to 2 tsp
- Plain fat free Greek yogurt

- 1 pinch es, or to taste
- Black pepper
- Everything bagel spice
