Giant blueberry pancake

I wanted a Giant Blueberry Pancake – something really filling, sweet and low carb for breakfast. Pancakes was on my mind, but they’re too many carbs to eat as much as I needed. Here’s my answer for two weight watchers points.

Ingredients
- 1 egg
- a splash of Fairlife 0% milk (I always keep this on-hand)
- 2 slices of 1pt bread
- 1 banana
- 1/2 cup blueberries
- cinnamon
- vanilla extract
- sugar-free maple syrup (this one is my go-to because it tastes great and is only $3/bottle with free shipping)
Instructions
- Whip your egg, with a splash of Fairlife 0% milk.
- Tear up 2 slices of 1pt bread and stir into the egg mixture, let it sit until the bread absorbs the egg.
- Add the mashed banana and mix well. I also tossed in some blueberries.
- Feel free to add cinnamon and vanilla extract.
- Cook on medium low in a nonstick pan until browned.
- Flip and cover with a lid until it sets and the other side browns.
- Serve with sugar free maple syrup.
