Mini Banana Blueberry Muffins

Thanks to Bev for sharing this yummy treat with us! Someone gave her the original recipe. and  she just tweaked it by changing the brown sugar. Her friend said that she used oat flour and omitted the yogurt so it’s very flexible for folks with food sensitivities. She used 2/3 c blueberries. I used 1 cup! She also tweaked it using Splenda Magic Baker brown sugar instead of regular brown sugar.

 Baking time will depend on the size of your pans. Bev made 24 mini muffins and a small Bundt cake (really cute! ) Two mini muffins = 1 point!

Banana(s)
3 medium
Fresh blueberries
¾ cup(s)
Egg white(s)
2 item(s)
Uncooked old fashioned rolled oats
1 cup(s)
All-purpose flour
1 cup(s)
Baking powder
¼ tsp
Baking soda
½ tsp
Splenda Magic Baker Brown Sugar Zero Calorie Sweetener
½ cup(s)
Ground cinnamon
½ tsp
Table salt
¾ tsp
Vanilla extract
1 tsp
Fage Total 0% Nonfat Greek strained yogurt plain
1 Tbsp

Instructions
350 degree oven. Bake 18-20 minutes in mini muffin tins that have been sprayed with Pam. Can also be baked in a loaf pan
