One Dish Vegan Sausage Leek Puff pastry pie

Serves 4
Ingredients
6 vegan sausages of choice
3 leeks
olive oil
2 garlic cloves, crushed
1 can butterbeans
2 heaped tsp wholegrain mustard
8.5 ounces soy cream (I used soya)
1 puff pastry sheet You should be able to find it ready made in a supermarket. Alternatively, you can make the pastry if you’d prefer https://www.fromthecomfortofmybowl.com/vegan-puff-pastry/
salt & pepper
Directions
1. slice up the sausages and leeks adding to a baking dish. Drizzle over oil + pinch salt and shake to combine
2. Bake at 400 degrees (fan oven) for 20 minutes
3. Remove from the oven and add in the garlic + drained butterbeans + mustard + cream + 1/4 cup water + pinch salt & pepper and mix
4. Lay over the puff pastry sheet and push in the sides to seal the edges. Glaze with oil and slice 3 lines in the top of the pastry
5. Bake for 25 minutes until the pastry is nice and golden
