Small Batch Mocha Glazed Chocolate Scones
Makes 4 – 6 grams of protein each

Preheat oven 325 degrees, grease 4 wells in either a brownie or muffin pan
½ cup of High Protein Pancake Mix, I use Kodiak Buttermilk
1 tsp of baking powder
6 tsps. of a butter spread, I use I Can’t Believe It’s Not Butter Light
1/8 cup of white granulated sweetener
½ tsp of vanilla extract
1 large egg
1/8 cup of unsweetened applesauce
¼ cup of dark cocoa powder, I use Hershey Special Dark
6 grams of chopped walnuts (optional)
Whisk in a medium/smallish bowl egg, sweetener, applesauce, mix in vanilla. Whisk in cocoa powder until you have a smooth chocolate batter. Add flour & powder to a separate bowl, add butter spread , toss to coat and add chocolate batter, mix until incorporated. Fill each well with a level ¼ cup scoop of batter. Top with walnuts.
Bake 12-15 minutes. Let cool in pan for a few minutes.
Mocha Glaze: Mix together 2 tsp of Mocha Skinny Syrup, I use Jordan’s with 3 Tbsp of Powdered Sweetener, I use Monkfruit Drizzle over cooled scones.
