 Cheat day, so my choice is the best tomato pie using our garden tomatoes and basil.

The Best Tomato Pie

This recipe is based on a Paula Deen pie on the Food Network site. It’s truly a great way to use up your garden tomatoes and so delicious.

Ingredients
1 cup grated mozzarella
1 9-inch prebaked deep dish pie shell
1/2 cup chopped green onion
10 chopped fresh basil leaves
4 peeled and sliced tomatoes
1 cup grated Cheddar
1 cup mayonnaise

Directions
Preheat oven to 350 degrees.

Using a medium sized bowl, mix mayonnaise, cheddar cheese, mozzarella cheese, salt and pepper.

place the sliced tomatoes on paper towels and patting them dry. do not blanch them.

layer the tomatoes, scallions, basil and the cheese mayo mixture in the pie shell.

I use very little salt as mayo and cheeses are salty. There are two cheeses in it, cheddar and mozarella.

Layer  and bake for 40 minutes or until lightly browned.

To serve, cut into slices and serve warm.
